Wrap chicken breasts and finely sliced vegetables in their own little packages to steam to perfection.

Serves:
4
  • 4 skinless, boneless chicken breasts (2 medium, 2 small)
  • 4 spring onions, trimmed and sliced
  • 1 carrot, cut into matchstick strips
  • 1 courgette, cut into matchstick strips
  • 1 teaspoon Chinese 5 spice powder (optional)
  • Pinch ground ginger
  • 2 teaspoons light soy sauce
  • Ground black pepper
  1. Cut 4 pieces of greaseproof paper or baking parchment, each measuring approximately 30cm square.
  2. Rinse the chicken breasts, put each one on to a piece of the paper, and top with the vegetables. Sprinkle with 5 spice powder (if using), ginger, soy sauce and black pepper. Fold up the paper to completely enclose the chicken.
  3. Put the parcels into a steamer and steam for 35-40 minutes. Check that the chicken is thoroughly cooked by unwrapping one parcel. Insert a sharp knife into the thickest part - there should be no traces of pink and the juices should run clear.
  4. Serve the chicken in the parcels, accompanied by noodles, rice or potatoes.

Tip 1: You don't have to have a fancy steamer to make this recipe. If you have and expandable steamer tray that fits inside a saucepan, that will do nicely!

Tip 2: It's important when steaming to make sure that the water never boils dry. Check from time to time and top up with extra boiling water if needed.
