  • Vegetable oil, for greasing
  • 2 x 200g cans tuna in water, drained
  • 500g carrots, grated
  • 1 small onion, finely chopped
  • 100g fresh wholemeal breadcrumbs
  • 1 large egg, beaten
  • 50g mature Cheddar cheese, grated
  • 1 tablespoon chopped fresh coriander or parsley
  • Ground black pepper
  • Crisp lettuce leaves, such as Iceberg or Chinese leaves, to serve
  1. Preheat the oven to 200°C, fan oven 180°C, gas mark 6. Grease a large baking sheet with a little vegetable oil.
  2. Put the tuna into a large mixing bowl and mash it with a fork. Add the carrots, onion, breadcrumbs, egg, cheese and coriander or parsley. Season with some pepper.
  3. Form the mixture into 6 patties and arrange them on the prepared baking sheet. Bake for about 20-25 minutes, until golden brown. Serve in the lettuce leaves.

Tip 1: When you're really hungry, serve the patties in warm pitta breads or lightly toasted burger buns.

Tip 2: If you're vegetarian, replace the tuna with a 150g pack of marinated tofu pieces, chopped finely.
