Shredded vegetables with apples and raisins taste really good with a creamy low-fat soft cheese dressing. This is a bit like coleslaw, but with more going on!

  • 400g firm white cabbage, shredded
  • 1 small red onion, finely chopped
  • 1 large carrot, coarsely grated
  • 1 medium apple, cored and chopped
  • 1 tablespoon lemon juice
  • 30g raisins or sultanas
  • 100g low-fat soft cheese
  • 150g low-fat natural yogurt
  • Ground black pepper
  1. Put the cabbage into a large salad bowl. Add the red onion, carrot, apple, lemon juice and raisins or sultanas. Season with a little pepper and toss everything together.
  2. To make the dressing, put the soft cheese into a bowl and beat with a wooden spoon until softened. Add the yogurt and mix together. Pour over the salad and toss to mix. Serve.

Tip 1: For extra flavour, choose a low-fat soft cheese with garlic and herbs.

Tip 2: If you like, add some crunch to the salad by adding 50g plain peanuts or pine nuts.
